The much more reputable Physioroom has us ... joint 15th with 2 injuries. Only Burnley (1), Chelsea (1), and Southampton (0) have fewer.

Arsenal v Leicester (9 points):
Campbell, Joel – Knee Surgery
Cazorla, Santi – Plantaris Injury
Coquelin, Francis – Ankle Injury
Mertesacker, Per – Eye Injury
Özil, Mesut – Ankle Injury
Paulista, Gabriel – MCL Injury
Ramsey, Aaron – Calf Strain
Sánchez, Alexis – Abdominal Strain
Wilshere, Jack – Broken Leg
Stoke v Arsenal (5 points):
Campbell, Joel – Knee Surgery
Cazorla, Santi – Plantaris Injury
Mertesacker, Per – Eye Injury
Paulista, Gabriel – MCL Injury
Sánchez, Alexis – Abdominal Strain
Özil and Ramsey both played against Leicester. They don't count as injured.
Mertesacker was on the bench against Stoke. He doesn't count as injured.
Neither Gabriel (sold) nor Campbell (hopefully sold soon) are in our squad.
Wilshere doesn't have a broken leg, despite the best efforts of that Man City u23 player tonight.

Cazorla and Sanchez are the only two injured players in our squad. Sanchez is back soon and taking into account that Cazorla's only purpose at this point is to give you & the dailycannon 38 points for each of the 38 games he's going to be miss this season, I'd say we're doing pretty well.

Much of the problem you highlighted comes from the day they collect the data.
If it's say a Wednesday for example Mertersaker may still have been registered as injured with the FA. But by the Saturday he was deemed fit enough to be on the bench for Stoke. Same with Özil and Ramsey on week 1.
They should collect the data on Saturday. But then what about Sunday, Monday, Friday and mid-week matches. If our Stoke game had been Wednesday, Mertersaker might not have been on the bench.
Similar problem with the squad, if a player is being sold they might still be registered as injured with the FA right up until the transaction day. But this won't be a problem for much of the year.
Can't see a way around these issues by just trawling data from Premier injury.com. They'd need to get matchday info from the clubs, or not bother. Over 38 games it might give you a rough idea of the state of injuries but not how they impacted on team selection.
EDit: Which is probably why Physioroom.com dropped that simple computer trawl last year and was taken up by Daily Canon.
Yeah over many weeks it would give a feeling for the number of reported injuries but not how they would impact in matches.Yup, not the worst idea but made it utterly pointless by doing their scoring on Wednesday not game day. If they can't be arsed to do it properly then they shouldn't do it at all.
Should also only extend to the PL squad of 25 to stop it unduly favouring big squads.
Nothing to lose in this game and everything to gain.
Coquelin has to start this one alongside Xhaka, maybe even go for an extra man in midfield and do something like this.
