Willian is as good or better than grealish though he doesn't have the legs for it anymore,in any case Arteta plays him wide. However you are right we are very deficient in midfield. We need to improve significantly there.
And that's the thing. Our one paced midfield puts too much pressure on defence and attack and can't put us on the front foot on its own. Willian was better once he moved central but it was Pepe’s pace that pushed Sheffield Utd back. Grealish and Barkley dribble and retain the ball with pace better than any of our players.
